Cranberries and Turkey Day, Yummy!!

Funny how you are just enjoying summer, then in awe over the gorgeous fall colors on the leaves on the trees. Then it happens, oh my goodness it is the end of November and Thanksgiving Day is upon us. 

I am thankful for so many things each and every day. I am also a major foody and Thanksgiving gives me an excuse to cook all my favorites. When we are having guests my menu is big and unfortunately I can't seem to cut it back when it is just my husband, son and I. My husband loves to make fun of this but I notice he enjoys all the goodies as well.

On the menu this year is, of course, turkey. Then I add in the usual mashed potatoes and gravy, rolls, green bean casserole, and candied yams.  Then I have to include my pear and cranberry chutney, and cranberry sauce. I found awesome recipes for these and love to add them in at the holidays.
 Oh, don't forget the olives!

Leading up to dinner is lots of snacking on guacamole and chips, shrimp, salmon cheese ball, yummy meats,  cheeses and crackers. Oh yeah, the vegetable tray. Have to add our veggies and ranch dressing.

Beverages include homemade punch. A touch of Malibu Caribbean Rum makes it a bit more punchy. My husband sticks to Gin and Tonic, so boring. 

Now we all know the best part of dinner is dessert, I have been known to eat dessert for lunch. :)
I love cranberries and found a recipe that looked really good. It is a cranberry upside down cake.

I was looking through the magazine, 1859 Oregon's Magazine and this cake just called my name. The best part was you didn't have to go buy a bunch of stuff to make it as I had all of it at home. 

It took quite a while to prep and bake and of course my kitchen looked like a cyclone hit it when I was finished but the baking part went fine. It came out of the pan and went on my cake stand really easily. And best of all it looked really close to how it looked in the magazine. 

Tomorrow will be the taste test. Hope it tastes as good as it looks. And if not, I bought a backup lemon meringue pie so dessert has a backup plan if the cake taste test bombs.
